#MeatlessMonday - Spinach & #HempHearts Soup & @ManitobaHarvest #GIVEAWAY

There are days when NOTHING sounds better than a bowl of soup.  Yes, I realize I have been facing 100 degree weather here.


That is why, when I was sent Hemp Hearts for review purposes, I decided to look thru their recipe banks for something different.  Sure they suggest sprinkling it on cereals and salads but I wanted soup.  


I came across this awesome recipe for soup on their website and modified it for individual consumption (meaning - my family looked at me like I was crazy when I said I wanted to make spinach and hemp heart soup)!


Turns out I had all the ingredients I needed for this soup (or at least all the ingredients I could sub for the original ingredients in the soup).

Spinach Hemp Hearts Soup
2 cups loosely packed baby spinach
Juice of 1/2 a large lemon
1 tbsp coconut oil
1 small shallot
1.5 cups chicken / vegetable broth
1/3 cup Manitoba Harvest Hemp Hearts
Sea Salt (if needed)
Garnish: 1 tsp each Hemp Hearts & Parmesan cheese

Directions:
1.  Roughly shred one shallot and throw it in a saucepan


2.  Add 1.5 cups broth to the saucepan and heat until boiling.


3.  Place spinach in the blender jar.


4.  Squeeze in lemon juice.


5.  Add in coconut oil.


6.  Pour in boiling broth / shallot mixture and blend.


6.  Let cool for a few minutes and then measure in 1/3 cup hemp hearts.


7.  Blend again and pour into individual soup bowls or ramekins.  Garnish with parmesan and hemp hearts.  ENJOY!


It is delicious, refreshing, light and gluten free.  And can be made completely vegan too!  Okay, now you know how to make the hemp hearts soup. But why should you even bother with hemp hearts?  Glad you asked!


With all the talk about going meatless at least one day a week, making Hemp Hearts a part of your diet is a good idea.  Hemp Hearts are a COMPLETE protein!  Full of Omega 3s and 6s.  I hear those are great for you too!

  1. I'd love to try the Gazpacho recipe they have! I loved eating gazpacho when I lived in Spain, and adding the hemp hearts would be tasty!

  17. I put my Hemp Hearts in my oatmeal more often than anything else. I also have been known to put them in my protein shake and today I was pushed for time and slapped some peanut butter on a piece of bread and sprinkled my hearts on it, delish I have to say so!!
