Friday Fascinations: Deconstructed Summer Potato Salad

Hi Everyone!  Today I am linking up with The Fit Foodie MamaFairy BurgerPowered By BlingChocolate Runner Girl and Whatever Floats Your Oats for Foodie Friday with a brand new recipe!


I have a thing about mayo. I don't like it. I prefer traditional mayo based things without mayo. For example, I like egg salad made with avocado instead. And at a summer picnic, you can't trust the creamy potato salad not to spoil.

A couple years ago, I found this recipe on Better Homes & Gardens and have made it ever since. It is so fresh and delicious and it will NOT spoil when it is out for a couple hours on a hot summer day!

Isn't it so pretty??  I love the taste of basil and feta and balsamic and fresh tomatoes paired with potatoes. You will love it!  It's delicious with a turkey burger and a good beer!  You will make it all summer, I'm sure.  You can find the actual recipe and instructions here.

  2. Love it! While I'm not a potato salad fan I love deconstructed dishes and this looks like one I would like as it isn't a big bowl of mayo (which I hate).

  3. Yay! So glad to have you join us for Foodie Friday! :D I don't like mayo either, and oh em gee, avocado would make egg salad amazinggg. (I usually sub mayo with greek yogurt!) That vegetable salad looks all sorts of amazing!!
