It's super simple and I got the idea after heading to the grocery store for my regular almond milk and seeing this Silk Cashewmilk. I had some chia seeds, fresh mangos and nectarines in my pantry.
And of course because S is the best helper she was all about it!
I used 1/2 cup of chia seeds mixed with 2 cups of cashew milk. Then added 1 TBS of vanilla extract and 1/4 tsp of almond extract. I feel like almond extract goes so well with fruit. But maybe I would have added cashew extract if such a thing existed! And add 2 TBS sweetener. I used brown sugar. You could use maple syrup or honey too!
Give it a vigorous mix and store in the fridge for about 12 hours. Allow it to set up. Chia seeds get all gel like when they sit in liquid. So a pudding consistency.
Then layer it with fresh ripe summer fruit and enjoy as a snack or for breakfast like me!
