Now, I know you are all DYING to know what I eat for breakfast. Since October of last year, I have been eating the same breakfast every SINGLE morning. It is delicious, healthy and keeps you full until lunchtime. Here is the original recipe and below is my variation with some
Ingredients (in order used):
2 eggs (lightly beaten)
1/2 cup brown sugar
1 tsp sea salt
1/2 tsp vanilla
1/2 TBS baking powder
1/8 cup vegetable oil
1/4 + 1/8 cup unsweetened applesauce
1 cup milk
3 cups oatmeal (not steel cut)
1/4 cup chocolate chunks
3 TBS chia seeds
3 TBS flaxseed meal
Pre heat oven to 350 degrees.
Mix all ingredients together and pour into an 8x8 glass baking dish coated with coconut oil spray (you ca use spray of choice).
Bake for 25 minutes and set aside to cool. Then when you are ready to eat, I microwave my serving for about 40 seconds and pour cold milk on top and smash it all together. LOVE it!
I have also tried different variations like adding mashed bananas instead of applesauce and that works well too!

Mmm, baked oatmeal! I thought I wouldn't get a chance to make this again because the weather was warming up, but apparently the weather is full of lies and it's back to being super cold again. Time to make a batch! :P
